Corn recipes for Labor Day spread

One of the top seasonal vegetables served especially during Labor Day celebrations and picnics is sweet corn. Here are two recipes using fresh corn that are easy to make and delicious.

CORN SALAD

  • 2 cups fresh corn
  • 1 cup red pepper, chopped
  • 2/3 cup tomato, seeded and chopped
  • 1/4 cup red onion, chopped
  • 2 Tbs. cilantro, chopped
  • 1 jalapeno, minced
  • 1/2 tsp. lime zest
  • 2 Tbs. lime juice
  • 2 tsp. olive oil
  • 1/2 tsp. garlic salt
  • 1/8 tsp. black pepper

Combine all ingredients and allow to stand at least an hour before serving.

ELOTE (Grilled Mexican Street Corn)

  • 4 ears fresh corn
  • 1/3 cup mayonnaise
  • 1 fresh lime, juiced and zested
  • 1/2 tsp. chili powder or ancho chile powder
  • 1/3 cup cotija cheese
  • 2 Tbs. chopped fresh cilantro

Grill corn over high heat till lightly charred. Stir together mayonnaise and lime juice. Spread the mayonnaise mixture over the grilled corn and sprinkle with the chili powder, cotija, and cilantro. Season to taste with salt and serve with lime wedges for squeezing.
